Description

This pasta salad offers a unique twist in its preparation method, but it’s just as quick, easy and enjoyable to make. It’s guaranteed to be refreshing dish for those warmer summer days or picnic escapes.

Ingredients

250g Orecchiette

2 Baby courgettes (green, yellow or both)

7 Asparagus

Lemon juice & zest

Dijon mustard

Olive oil

Salt & Pepper

Instructions

Begin by thinly slicing the courgettes and chopping the asparagus. In a frying pan over medium heat, sauté or grill the asparagus and courgettes in vegetable oil.

Next, prepare a simple dressing by mixing olive oil, lemon juice, lemon zest, a small amount of Dijon mustard, salt, and pepper in a small jar.

Bring 2 litres of well-salted water to a boil, immerse your Orecchiette and cook for 4-5 minutes. Once ready, drain them.

While the pasta is still warm, stir in the courgettes, asparagus, and lemon dressing. Mix well to ensure the pasta is evenly coated, then season with salt and pepper.

Garnish with a final touch of fresh lemon zest, torn basil.
