Great Glen Charcuterie is a family business established in 2002 by Jan Jacob and Anja Baak after they moved to Scotland with their family from the Netherlands. They now live and work in the little village of Roy Bridge, set deep in the rugged Scottish Highlands where deer freely roam the hills around them.
They use sustainably sourced wild venison from the surrounding area. Their products are produced by hand and air dried because they are passionate about preserving as much of the unique and unrivalled flavour of wild venison as they possibly can. Venison Charcuterie is a healthy alternative to more common pork based charcuterie as it is low in fat and high in protein. One of the great things about charcuterie is how versatile and convenient it is on its own when you fancy a delicious snack, or want to entertain guests with canapés or antipasto.
